Caprese Sandwich

Sandwiches aren't what they used to be and they're not just for lunches anymore. This month we've got a delicious, nutritious Caprese sandwich for you that's good for lunch or dinner ... or anytime really!

The fresh summertime flavors of tomato and lettuce work well with the creaminess of the mozzarella; all come together with a simple balsamic reduction that makes these tastes dance across your tastebuds. Quick. Easy. Delicious. Nutritious. This ain't your momma's sandwich anymore!

CapreseSandwichIngredients:

  • 6 large roma tomatoes, thickly sliced
  • 1 pound sliced mozzarella cheese
  • 2 cups basil leaves, washed and patted dry with a clean paper towel
  • 1 clove garlic, minced
  • 1 cup balsamic vinegar
  • 1 tablespoon dried oregano
  • 1/2 Cibatta rolls, 1 per person, halved
  • salt and pepper to taste

Directions:

In a medium saucepan, combine the garlic and balsamic vinegar and bring the mixture to a simmer. Simmer until vinegar is reduced by half and becomes syrupy, but not burnt. Remove from heat and allow to cool.

Meanwhile, lightly season the tomato slices with salt and pepper to taste. Assemble the sandwiches by stacking mozzarella slices, then tomato slices on the cibatta rolls. Sprinkle dried oregano over the tomatoes and cheese, then top with basil and drizzle the balsamic reduction over the basil/tomato/cheese stack. Place tops of rolls on sandwiches.

Plate and serve with a simple green salad. Serves 4 – 6.
