Vegetarian Simmered Lentils with Spinach

  • 1 cup dry lentils
  • 2 cups water
  • 1 large white onion, finely chopped
  • 2 tablespoons olive oil
  • 1/2 tablespoon minced garlic
  • 3 cups freshly chopped spinach, rinsed and drained
  • 1 (28oz) can diced tomatoes, drained
  • 1/2 cup fresh basil, finely chopped
  • 1 tablespoon lemon juice
  • salt and pepper to taste


In a small saucepan, bring water to a boil and add lentils. Boil until cooked through and softened, approximately 30 - 40 minutes. Drain and set aside.

Heat olive oil in a large saute pan over medium high heat. Add the onion and garlic to the pan and cook until soft and fragrant. Add the tomatoes, basil and spinach to the pan, and cook until spinach begins to wilt. Add the lentil. Season with salt and pepper to taste, and cook for an additional 2 minutes. Stir in the lemon juice.

Plate and serve with crusty bread and a green salad. Serves 4 – 6.
